French Breakfast Puffs

Since before Christmas someone has been sick in our house. This is crazy, we are never sick! But it seems it just makes the rounds. I hadn’t gotten it though! Well, I think my body just finally gave in because the last few days I have been feeling like it was coming, but I was downing the Airborne.. I don’t feel full on sick just yet, but I feel like it is just on the verge. Going to lay in bed and relax until tomorrow, if I can…

Anyway, I haven’t felt like going to the store and I knew we were running low on the kids favorite breakfast items..  I thought about making chocolate chip muffins, which is my go-to when I am thinking of making them something…but I know they like having a change. So, before they woke up I decided to make French Breakfast Puffs and have them hot and ready upon waking…

This recipe is from Jeffy’s mom and they always turn out sooo good…

French Breakfast PuffsFrench Breakfast Puffs

2/3 cup soft shortening
1 cup sugar
2 eggs
3 cups flour
3 tsp. baking powder
1 tsp. salt
1/2 tsp. nutmeg
1 cup of milk
1/4 cup melted butter
1/2 cup sugar
1 tsp. cinnamon

Mix thoroughly the shortening, sugar and eggs.
In another bowl, sift together flour, baking powder, salt and nutmeg.
Stir dry ingredients alternately with milk into the shortening mixture.
Fill greased or papered muffin pan 2/3 full. Bake at 350 for 20-25 minutes, until golden brown.

Serve hot!
We have success in heating them up again the next day, but it is always nice to put fresh cinnamon sugar on too…
